At the San Francisco World Spirits Competition, a Double Gold means every judge on the panel scored the bottle Gold. Win Double Gold three years in a row and the competition names it Platinum. This bottle has now done that twice.
Different judges every year, tasting blind, reaching the same verdict four years straight. That's the part that's hard to fake.
Ten years ago, you could read an age statement on plenty of bourbons under $100 and know roughly what was in the bottle. That was normal.
Then demand outpaced barrels. Distilleries had young whiskey to move and a business to keep running. Age statements came off quietly. Very Old Barton lost its around 2013. Elijah Craig followed in 2015 and 2016. Knob Creek did too.
Extra oak has its own version of that trick. A second barrel is an easy way to cover up spirit that isn't mature enough to stand on its own, more char and vanilla papering over something thin underneath.
Our base is already 8 to 15 years old before it ever sees a second barrel. The judges who gave it Double Gold four years running were tasting a finish on top of a base that didn't need to hide.
Finishing in a second charred barrel means holding the bourbon even longer. Most distilleries can't afford that wait. We can. We don't own a still or a rickhouse.
A distillery has costs running every day and has to sell what's aging now. We're not on that clock. The second barrel isn't a cost we're racing to recover.
Extra time in oak means extra time paying for space, insurance, and evaporation. We don't carry that overhead, so a second finish doesn't threaten our margin.
We start with barrels already 8 to 15 years old, then finish them in a second new charred oak barrel. Aging comes first. The finish is added on top, not instead of it.
