Rye whiskey has its own version of the same move. It's not about age. It's about content.
Legally, a whiskey only needs 51% rye to put "rye" on the label. The rest can be corn, the cheaper grain, and there's no way to tell from the shelf.
Ours is 95% rye and 5% malted rye. No corn in the mash bill at all. That's not a tasting note. It's the mash bill.
51% rye is the legal floor, not a quality target. We don't own a still or a rickhouse. We're not under pressure to stretch the mashbill with cheaper grain.
A distillery has to keep production moving and costs down. Leaning on 51% rye and filling the rest with corn is cheaper. We're not the ones running that math.
We're not paying to age barrels ourselves. So we're not looking for shortcuts in the mashbill to offset that cost.
We selected a 95% rye, 5% malted rye mashbill with no corn at all. We weren't building around what's cheapest to produce.
